Koti grew up in Greenfield and has called Western Massachusetts home his entire life. His passion for cooking began while attending Putnam Vocational Technical Academy’s Culinary Arts program in Springfield, MA, launching a career that has grown into more than 15 years of fast-paced, high-volume kitchen experience. From line cooking to kitchen management, the culinary world is all he’s ever known. Still, if you ask him, he’ll tell you he’s only just getting “seasoned” — with plenty more to learn and many more dishes to create
